White chocolate flapjack

I LOVE flapjack…mainly because it’s super easy & quick but also because you can add pretty much anything to it. I like to add white chocolate chips to mine but you can add anything really – fruit to make it more healthy or coconut and cherries (another of my faves!)

You will need: 

  • 250g Porridge Oats
  • 125g Butter
  • 125g Brown Sugar
  • 2-3 tbsps Golden Syrup (depends how gooey you want it)
  • Any fruit or chocolate

What you do:

  1. Preheat the oven to 180 C / Gas mark 4.
  2. In a saucepan over low heat, combine the butter, brown sugar and golden syrup. Cook, stirring occasionally, until butter and sugar have melted. Stir in the oats and sultanas until coated. Pour into an 20cm square baking tin. The mixture should be about 2 to 3cm thick.
  3. Bake for 30 minutes in the preheated oven, or until the top is golden. Cut into squares, then leave to cool completely before removing from the tin.
